Braised Ribs with Rice and Beans

I braised some ribs in a flavorful liquid of chipotle peppers in adobo, tomato sauce, beef stock, and various spices until nice and tender. On the side, or perhaps even featured, since I'm trying to eat less meat, I had Mexican rice, black beans topped with cotija cheese, and salsa.
