Chipotle Pesto Pasta

This pasta features a tasty pesto made with basil, cilantro, olive oil, sundried tomatoes, and chipotle peppers in adobo sauce. Fresh cilantro and diced tomatoes give it a fresh, vibrant taste. It is supposed to be topped with cotija cheese which can be difficult to find so I used a white farmer's cheese today.
