Buffalo Fried Chicken

Today I made fried chicken for the first time. The nice crispy crust of fried chicken has always mystified me because the method seems to use so little batter for such a nice crust. My fear was unnecessary, for the chicken turned out with a perfect crunch. I ate the drumstick as is and deboned the thigh meat to dip into some buffalo sauce made simply of Frank's Red Hot and butter. The buffalo sauce dipped chicken went on a bun with some onion, bleu cheese dip, and spinach for a tasty sandwich.
